Coming up now is the Matatoki Cheese Factory. The factory opened in 1998 and to date produces more than 20 different cheeses. Interestingly, the all year round production of soft cheeses like Brie, Feta and fresh mozzarella slows during the winter months because the milk supply decreases. The Mataoki Cheese Factory also produces sheep cheeses. They are a great alternative for allergy sufferers, they’re easily digested and very high in protein. One thing all the cheeses have in common is that they are made using only fresh whole milk.
